Session Summary
Traditional Indian Cuisine along with spices and herbs used commonly has its roots in the ancient wisdom of Ayurveda. Although it has evolved with the migration of this population all over the world, adapting to the local cuisine, some principles of eating remain the same. This webinar will discuss the 6 tastes described in Ayurveda, which is the basis of diet recommendations for the different body types. It will also cover the elemental composition of foods based on the 5 great elements and their impact on the patient’s/client’s health. The stages of digestion along with key concepts of Agni (digestive fire) and Ama (metabolic toxins) will be discussed. Practical questions for Assessment of imbalances in patients and appropriate food choices will be covered. The use of spices in cooking and their value will be emphasized. General rules for meal planning and other lifestyle recommendations using Ayurvedic principles and ways to incorporate it into your practice of medical nutrition therapy will be outlined. It will provide an intuitive approach to diet counseling in all settings.

Speaker Bio

Pushpa Soundararajan (RDN, LDN, CYI, AHE, AFNC, MBA) is a Registered Licensed Dietitian Nutritionist who graduated with a Bachelor’s Degree in Nutrition and Medical Dietetics, CUP program from the University of Illinois in Chicago. She has over 30 years of experience in nutrition counseling to patients in many settings including dialysis units, hospitals and outpatient centers. Pushpa is also a Certified Yoga Instructor, Ayurvedic Health Educator and Ayurvedic Food and Nutrition Consultant. She is currently in Private Practice as a Registered Dietitian Nutritionist and believes in integrating ancient principles of Ayurveda with Modern Medical Dietetics in providing her clients with a comprehensive individualized nutrition plan for health and healing. She has been a speaker at several conferences on varied topics, integrating Ayurveda and modern medicine for a holistic approach to health. She co-authored a book, A Primer on Ayurveda, which was published in October 2018, and serves as a practical guide for personalized nutrition for dietitians and other healthcare providers.
