President Elect

Elizabeth Hurley, MS, RD, LDN, CSCS

 

Liz Hurley currently serves as the President of the Raleigh Dietetic Association for the 2018-2019 term.  Liz has served on the RDA board since 2015 in various positions including: Student Liaison, National Nutrition Month Chair, and President Elect.  She has also served on the NCAND board as the Social Media/Communications Chair since 2017 and is currently a member of the NCAND Program Planning Committee.  Liz is passionate about helping and supporting other dietitians to advance their career and get involved in their local communities. Currently, Liz works for a behavior change technology company as well as at Meredith College as Adjunct Faculty in the Nutrition, Health, and Human Performance Department.  Liz was awarded the NCAND Outstanding Dietetics Student of the Year award in 2017 and was the 2018 Recognized Young Dietitian of the Year.  In her free time Liz enjoys testing out new recipes in the kitchen and spending as much time outside as she can with her dog, Boone.

Shaynee Roper, M.Ed, RD, LDN, FAND

Shaynee Graduated with a Bachelor’s degree in Human Nutrition and Foods from the University of Missouri and then went on to earn her Master’s degree in Physical Education (Exercise Science) from the University of Houston. She has been a Dietitian for the last twenty eight years working in a variety of settings from small hospitals and home health/home infusion to large health systems. Her career has afforded many opportunities such as: hosting a monthly radio program, television appearances, teaching cooking classes, providing numerous nutrition presentations to the community, and providing care to patients with a variety of disease processes. Currently, she works as the Clinical Nutrition Manager for WakeMed in Raleigh, NC managing both Dietitians and Patient Services Employees.  Shaynee serve as an Adjunct Instructor for various courses both online and in person classes. For eighteen of the last twenty five years,  she has taught various Nutrition courses at the University level. Currently, serves as an ACEND Reviewer and the CE Administrator for NCAND, and was recently elected as the Preceptor Director for NDEP (begins 6/1/19).  In her free time, Shaynee likes to cook and travel.

Sylvia Escott-Stump, MA, RDN, LDN, FAND 


Sylvia Escott-Stump has authored 9 editions of Nutrition and Diagnosis-Related Care; 5 editions of Krause’s Food and the Nutrition Care Process; and 2 editions of Nutritional Foundations and Clinical Applications: A Nursing Approach.  Sylvia served on the Board of the International Confederation of Dietetic Associations. At the Academy of Nutrition and Dietetics, she served as President; Speaker of the House; Chair of the Standardized Language task force, Nutrition Educators and Preceptors Council, and the Clinical Nutrition Management practice group. Her honors include the Academy’s Medallion Award, Fellow of the Academy, Lenna Frances Cooper Lecturer, Outstanding Dietitian from North Carolina and Pennsylvania, Distinguished Alumni Award from Indiana University of Pennsylvania, and an honorary doctorate.
